How To Make Baked Brie



I think it’s safe to say, I will never have a cooking show, but I have friends who ask me how I make my baked brie. Usually they prefer I just make it for them though. If you want to tolerate my low budget video (in which I endured some technical difficulties today), you might still find some useful information like where to find the crackers I use or you might enjoy my friend’s surprise reaction when she was so happy I made it for her.

Baked Brie With Apricot Preserves and Caramelized Onion

One wheel of brie (16oz.) – Save the lid!
Puff Pasty – two sheets (found in the frozen aisle)
Apricot preserves
Sweet onion, sliced
4 tablespoons butter
1 egg
Pinch of salt
Croccantini Artisan Crackers (La Panzanella)
Black grapes, cut in half

Thaw the puff pastry in plastic wrap, unfolding it when it’s thawed enough. Place on a floured surface and roll with a rolling pin enough to seal the seams, but make it slightly bigger.

Cut the onion in half lengthwise and then thin slices the other direction.

Melt the butter in a pan at medium heat, add the onion, sautéing until golden, lowering to medium low if necessary.

Cut the brie in half like a sandwich. spread on the apricot preserves on one side, and add the onion. Put the other half of the brie on top.

Crack the egg into a bowl, beat it, and add a pinch of salt.

Put the brie on the pastry dough and using a pizza slicer, cut a circle around it, leaving enough pastry to gather it to the top of the brie, first brushing it with the egg wash.

Take the brie lid and use it to cut out some dough for the top. Brush the outside of the dough with egg wash, add the top, and then brush with more egg wash.

Run a fork lightly on the top to give it texture and then use a cookie cutter to add a beautiful touch on top, again brushing with the egg wash.

Place in a pie dish. Bake at 400 for about 30 minutes.

Spread the melted brie on the crackers and add the grape halves.
